Tasting note
A direct-press rosé from Shiraz and Cabernet, fermented cool on its native yeasts. Pale salmon, peach and apricot on the nose, a touch of white pepper. Dry, light-bodied, almost no tannin. Best in its first year, slightly chilled.
Site
The fruit came from the same Kedros slope as the reds — only picked earlier, when the sugars were lower and the acids still sharp. Cool nights at 650 metres preserve the aromatics that summer heat usually burns off.
Process
Pressed straight off the skins, no maceration. The juice settled overnight and fermented slowly at eighteen degrees in glass. Two rackings, seventeen parts per million of sulphites at bottling. The colour is what the grapes gave — nothing added to push it.
